Roll: Producer, Videographer, Editor Baketivity Bake Away Championship Submission Video https://baketivity.com/vote/ ------------------------------------------------------- Shannon’s Snickerdoodle Cookies 1.5 cups flour ½ tsp baking powder ½ tsp cream of tartar ¼ tsp baking soda ¼ tsp salt ½ C unsalted butter ½ C sugar ¼ C brown sugar 1 egg 1 tsp pure vanilla extract ⅓ C sugar 1.5 tsp ground cinnamon In a large bowl whisk together flour, baking powder, soda, cream of tartar and salt. Place butter in dish and microwave till melted and cool completely Add both sugars to cooled butter and whisk for 30 seconds. Add egg and vanilla and whisk until combined. Add dry ingredients to wet ingredients and stir with a wooden spoon until combined.. Refrigerate dough for 30 minutes. While the dough is cooling, start on the dishes! Line a baking sheet with parchment paper or silicone baking mat. Preheat oven to 350 degrees In a small mixing bowl add sugar and cinnamon. Scoop cookie dough into 1.5 tbsp size balls and roll in cinnamon sugar mixture Place balls 2 inches apart on baking mat Bake for 9 - 11 minutes. The cookies will be puffed but should deflate while cooking and have classic snickerdoodle folds. Shannon’s Cinnamon Buttercream Frosting 1 C unsalted Softened butter 1 tbsp pure vanilla extract ¼ tsp salt 2 tsp cinnamon 6 C powdered sugar 3-4 tbsp heavy whipping cream Add softened butter to bowl If you have an adult present ask to use the Kitchenaid mixer or handheld mixer. If not, just use a wooden spoon and beat butter until creamy. Add vanilla and salt Gradually add powdered sugar and heavy whipping cream Continue beating at a medium speed until everything is incorporated Add cinnamon and stir to combine If frosting is too stiff, add a little more heavy whipping cream. Now add your frosting to a piping bag as shown in the video and you’ll be ready to decorate!
